Lots of people think they can’t pan fry a steak: it always ends up either burnt and as tough as old boot leather or raw and bloody! But all it takes is bit of practice. Pan frying is a simple way to cook meat. You have a lot of control over the cooking process and whipping up a sauce, or gravy from pan juices is dead simple. All you need is one good frying pan!
Follow these tips for pan frying a great steak every time.
Make sure the pan is really hot before putting the steaks in it. This means that when the steak hits the pan, the outside edges sear and seal in the juices and flavour.
Throw a knob of butter into the hot frying pan before you add the steak: the flavour is amazing!
For a rare steak, cook it for 2–3 minutes then turn it and cook it for another 2–3 minutes.
For a medium-rare steak, cook it for 4–5 minutes then turn it and cook it for another 4–5 minutes.
For a medium steak, cook it for 6–7 minutes then turn it and cook it for another 6–7 minutes.
For a well-done steak, cook it for 7–8 minutes then turn it and cook it for another 7–8 minutes.
Only turn a steak once and serve it immediately.
